Ingredients

  • 2 cups of almond flour (aka almond meal)
  • 5 eggs
  • 1/4 cup of whey protein powder (Whey Isolate)
  • 1 tsp baking powder
  • 1 tbsp vanilla extract
  • 1 Neufchatel Cream cheese bar (not strict paleo!)
  • 1 cup of cooking splenda or stevia
  • 1 tbsp lemon zest

Instructions

  1. Pre-heat oven to 350F
  2. Whip the cream cheese and Splenda together to a creamy consistency
  3. Add eggs one by one as you continue to whip and maintain creamy consistency
  4. Add Almond flour cup by cup as you continue the mixing process
  5. Add whey, baking powder, vanilla extract
  6. Add the lemon zest. Do not use a cake mixer for this, you do not want to mix this too well or your cake will be bitter!
  7. Bake for 30 minutes

  • 3/4 cup of whey protein powder (Whey Isolate)
  • 1.5 cups Cooking Splenda (or Stevia if you want to be more strict paleo)
  • 2 eggs
  • 1/2 cup of melted butter.
  • 1 cup of almond flour (aka almond meal)
  • 1 tsp vanilla
  • (Optional) Chocolate chips of your choice

Instructions

  1. Pre-heat oven to 300F
  2. Mix the butter with the splenda
  3. Add eggs and vanilla – Whisk thoroughly! (See image below)
  4. Add almond flour, protein shake, and chocolate chips (optional). (See below)
  5. Use a spoon to place wads of cookie dough on a baking sheet.
    • Leave at least one inch between each wad.
    • You want each raw wad of dough to be shaped like a cookie
  1. Bake for around 20-25 minutes. The bigger each cookie, the longer you need to bake them. If your dough came out to 9 cookies, bake for 20 minutes. If your batter came out to 6 cookies, bake for 25 minutes.

POWER TASTE TIP: White chocolate chips taste DELICIOUS with this recipe. There’s seriously some mysterious synergy between white chocolate and almond flour, I swear!
